Ingredients
Scale
- 1 lb (450 g) ground beef
- 1 packet taco seasoning mix
- 1 cup water
- 8–10 lasagna noodles, cooked and drained
- 1 can (15 oz / 425 g) diced tomatoes with green chiles (like Rotel)
- 1 can (15 oz / 425 g) refried beans
- 1½ cups salsa
- 2 cups shredded cheddar cheese
- 1½ cups shredded mozzarella cheese
- ½ cup sour cream (optional, for topping)
- ¼ cup chopped cilantro or parsley
Instructions
- In a skillet, brown the ground beef over medium-high heat. Drain excess fat, add taco seasoning and water, and simmer until thickened. Stir in diced tomatoes and salsa; cook for 3–4 minutes.
- Spread a thin layer of the meat sauce on the bottom of a greased 9×13″ baking dish. Layer as follows: Lasagna noodles, refried beans (spread evenly), meat sauce, cheese blend (cheddar + mozzarella). Repeat until all ingredients are used, finishing with a thick cheesy top layer.
- Cover with foil and bake at 375°F (190°C) for 25 minutes. Remove foil and bake another 10 minutes until the cheese is bubbly and golden.
- Let it rest for 10 minutes before slicing into tall, gooey squares. Top with sour cream, cilantro, and extra salsa if desired.
Notes
- Feel free to customize with your favorite toppings.
- Can be made ahead and stored in the refrigerator before baking.
- For a spicier version, add jalapeños to the meat sauce.
