Description

A creamy, refreshing fruit salad loaded with pineapple, mandarins, cherries, coconut, and mini marshmallows—perfect for summer gatherings, potlucks, or as a light dessert.


Ingredients

  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1 cup mandarin orange segments (drained)
  • 1 cup maraschino cherries (halved, stems removed)
  • 1 cup mini marshmallows
  • 1 cup shredded sweetened coconut
  • 1 cup sour cream (or Greek yogurt for lighter version)
  • ½ cup whipped cream (or whipped topping)
  • 2 tbsp honey or powdered sugar (optional, for extra sweetness)
  • Garnish: extra cherries, coconut flakes, orange slices

Instructions

  1. In a large mixing bowl, combine sour cream (or yogurt) with whipped cream until smooth and creamy. Add honey or powdered sugar if you prefer it sweeter.
  2. Fold in pineapple, mandarin oranges, cherries, mini marshmallows, and coconut. Mix gently to avoid breaking the fruit.
  3. Cover and refrigerate for at least 2 hours to allow flavors to blend. Garnish with extra cherries, orange slices, and a sprinkle of coconut before serving.

Notes

  • For a lighter version, use Greek yogurt instead of sour cream.
  • Feel free to adjust the sweetness by adding more or less honey/powdered sugar.
