Ingredients

  • 1 tsp baking powder

  • ¼ tsp salt
  • ½ cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup coconut milk (or whole milk)
  • Zest of 1 lime (optional, for tropical flavor)
  • 1 cup unsalted butter (softened)
  • 3 cups powdered sugar
  • 2 tbsp coconut cream or heavy cream
  • 1 tsp vanilla extract
  • Gel food coloring (blue, teal, yellow)
  • 2 cups clear apple juice or white grape juice
  • 2 tbsp sugar
  • 2 tbsp unflavored gelatin powder
  • Candy pearls or edible beads (to resemble “bubbles”)
  • Small tropical gummy candies or molded candy fish

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk flour, baking powder, baking soda, and salt.
  3. In another bowl, beat butter and sugar until creamy. Add eggs and vanilla.
  4. Gradually add dry ingredients, alternating with coconut milk. Mix until smooth.
  5. Fill liners ⅔ full and bake 18–20 minutes. Cool completely.
  6. Beat butter until fluffy. Add powdered sugar gradually.
  7. Mix in coconut cream and vanilla until smooth.
  8. Divide and tint frosting with gel colors (blue, teal, yellow).
  9. Pipe swirls on top of cooled cupcakes to create a wave-like base.
  10. Heat juice and sugar until warm. Sprinkle in gelatin and stir until dissolved.
  11. Pour into a shallow tray and chill until set. Cut into “jelly” cubes.
  12. Decorate frosted cupcakes with gelatin cubes, candy pearls, and place a gummy or candy fish on top.
  13. Place “aquarium jelly” gently over frosting swirls.
  14. Sprinkle with edible pearls and finish with a candy tropical fish.
