Ingredients

  • 2 cups (250 g) all-purpose flour
  • ½ cup (100 g) granulated sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup (120 ml) buttermilk
  • 2 large eggs
  • ¼ cup (60 ml) pineapple juice
  • ¼ cup (60 ml) coconut milk
  • ¼ cup (55 g) unsalted butter, melted
  • 1 tsp vanilla extract
  • 1 ½ cups (180 g) powdered sugar (for glaze)
  • 23 tbsp pineapple juice (for glaze)
  • ½ tsp coconut extract (optional, for glaze)
  • ½ cup toasted shredded coconut (for topping)
  • ½ cup pineapple chunks (fresh or canned, drained, for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a donut pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk buttermilk, eggs, pineapple juice, coconut milk, melted butter, and vanilla.
  4. Gently fold wet ingredients into dry ingredients until just combined (do not overmix).
  5. Spoon or pipe batter into donut pan, filling about ¾ full.
  6. Bake for 12–15 minutes, until lightly golden and springy to the touch. Cool completely before glazing.
  7. In a bowl, whisk powdered sugar with pineapple juice until smooth. Add coconut extract if desired.
  8. Dip cooled donuts into glaze, letting excess drip off.
  9. Sprinkle toasted coconut over the glaze.
  10. Add pineapple chunks on top for a tropical finish.

Notes

  • Ensure donuts are completely cool before glazing to prevent the glaze from melting.
  • Adjust the amount of pineapple juice in the glaze for desired consistency.
