Delightful Tropical Pineapple Coconut Donuts topped with a sweet glaze and toasted coconut.
Ingredients

- 2 cups (250 g) all-purpose flour
- ½ cup (100 g) granulated sugar
- 2 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ½ cup (120 ml) buttermilk
- 2 large eggs
- ¼ cup (60 ml) pineapple juice
- ¼ cup (60 ml) coconut milk
- ¼ cup (55 g) unsalted butter, melted
- 1 tsp vanilla extract
- 1 ½ cups (180 g) powdered sugar (for glaze)
- 2–3 tbsp pineapple juice (for glaze)
- ½ tsp coconut extract (optional, for glaze)
- ½ cup toasted shredded coconut (for topping)
- ½ cup pineapple chunks (fresh or canned, drained, for topping)
Instructions
- Preheat oven to 350°F (175°C) and grease a donut pan.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk buttermilk, eggs, pineapple juice, coconut milk, melted butter, and vanilla.
- Gently fold wet ingredients into dry ingredients until just combined (do not overmix).
- Spoon or pipe batter into donut pan, filling about ¾ full.
- Bake for 12–15 minutes, until lightly golden and springy to the touch. Cool completely before glazing.
- In a bowl, whisk powdered sugar with pineapple juice until smooth. Add coconut extract if desired.
- Dip cooled donuts into glaze, letting excess drip off.
- Sprinkle toasted coconut over the glaze.
- Add pineapple chunks on top for a tropical finish.
Notes
- Ensure donuts are completely cool before glazing to prevent the glaze from melting.
- Adjust the amount of pineapple juice in the glaze for desired consistency.
