Ingredients

  • 1 cup buttermilk (room temperature)

  • 2 large eggs (room temperature)
  • 2 tsp vanilla extract
  • 1 cup hot coffee (or hot water for milder flavor)
  • 2 cups heavy cream (for filling)
  • ½ cup powdered sugar (for filling)
  • 1 box (3.4 oz) instant vanilla pudding mix (for filling)
  • 1 tsp vanilla extract (for filling)
  • 1 cup semi-sweet chocolate chips (for ganache)
  • ½ cup heavy cream (for ganache)
  • Whipped cream (for decoration)
  • Chopped chocolate bars (KitKat, Reese’s, Snickers, etc.) (for decoration)
  • Shaved chocolate (for decoration)
  • Chopped nuts (optional, for decoration)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans.
  2. In a bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add buttermilk, oil, eggs, and vanilla. Beat until smooth.
  4. Slowly add hot coffee and mix until combined (batter will be thin).
  5. Pour into pans and bake 30–35 minutes, until a toothpick comes out clean. Cool completely.
  6. Whip heavy cream, powdered sugar, pudding mix, and vanilla until stiff peaks form.
  7. Spread evenly between the cooled cake layers.
  8. Heat heavy cream until just simmering. Pour over chocolate chips.
  9. Let sit 2 minutes, then stir until glossy. Let cool slightly before dripping.
  10. Place bottom cake layer on a plate. Spread cream filling. Top with second cake layer.
  11. Pour chocolate ganache over the top, letting it drip down the sides.
  12. Pipe whipped cream swirls on top. Garnish with chopped candy bars, chocolate shavings, and nuts.
